Because I know you all want to know what we’re eating over here these days.
Last week pork butt was on sale at Meijer and so my dear husband picked up almost 10lbs of it. So this has been the week of Pork. And it has been fabulous.
Yesterday I made this fabulous Pork Ragu with a few changes. I added a can of diced tomatoes to it, diced my carrots instead of grating them, and used Herbs de Provence for in lieu of rosemary and thyme. It was absolutely delicious and made my mouth water all day as it cooked. So easy.
Because my mom was visiting and could wrangle Gianna, I also made some homemade fettuccine with my trusty Kitchen Aid mixer. The pasta attachments don’t get to come out and play very often, but having fresh pasta was a great addition to the sauce and really made the meal. Another tip, throw a heaping spoonful of ricotta cheese on top of your bowl of ragu and mix it in- to die for!
Today was another crock pot day, except this time with a Mexican flavor. The crock pot might very well be my favorite kitchen appliance. Thank you Irving Naxon, inventor of this ingenious device that lets me through dinner together during breakfast and then not think about it for the rest of the day, all while having a house that smells delicious! But I digress. Tonight’s meal was Carnitas courtesy of Skinnytaste.com. It’s one of Mark’s favorites, and super easy. It also comes out well even if you get lazy and don’t sear the meat first.
Tomorrow the plan is for a traditional pork roast with veggies. I’ll keep you posted. . .
